This plant-based alternative to hot dogs is surprisingly tasty! Easy carrot dogs are just 30 minutes away. Also Carrots are a particularly good source of beta carotene, fiber, vitamin K1, potassium, and antioxidants.
Ingredients
8 medium carrots (peeled and trimmed to hot dog bun length)
1 cup Tamari, gluten free, reduced sodium
2 tbsp liquid smoke
2 tbsp vegan Worcestershire Sauce
2 tbsp Maple syrup
2 tbsp Tomato paste, organic
2 cup Water
Instructions
Stove Top
In a medium saucepan, whisk together liquid ingredients (tamari, liquid smoke, worcestershire sauce, maple syrup, tomato paste, and water).
Add all 8 peeled carrots and bring to a boil.
Reduce heat to a medium simmer and cook carrots until barely fork-tender, 8-10 minutes depending on thickness.
Remove from the heat and let sit in liquid for 15-20 minutes.
Remove from the cooking liquid and serve with hot dog buns of choice and desired toppings. Instant Pot/Pressure Cooker
1. All liquid ingredients into the Instant Pot insert and whisk to combine. 2. Add carrots and lock the lid. 3. Cook at high pressure for 3 minutes, then release the pressure manually. 4. Let the carrots sit in the marinade for 15-20 minutes, simmering in the liquid if not all the way cooked.
