Zucchini Pancakes are the perfect way to enjoy the perfect vegetable
Ingredients
Servings: 2 Servings
2 small Zucchini
2 large egg
3 tbsp gluten-free flour
1 dash Black pepper
1 dash Salt
1 tbsp Olive oil
Instructions
Put eggs in a bowl and whisk lightly
Add salt and pepper and mix
Peel and grate zucchini. Then add them to the eggs and mix
Mix in the flour
Heat up a frying pan and add the oil for frying
Use a spoon to pour the mix into the pen, a spoon per pancake
Fry pancakes till lightly browned on each side
