Gluten, Lactose and sugar free
These lemon ginger cookies are made with fresh lemon ginger shot, a little ground ginger and plenty of lemon zest. Citrus and spice make a balanced and refreshing duo, especially if you’re craving a lemon cookie with more depth of flavor. Each cookie is soft and chewy in the centers with irresistibly crisp edges.
I didn’t think I’d love a lemon cookie quite as much as I loved these. Ginger’s spicy heat and lemon’s bright flavor complement each other so well. It’s like the perfect marriage that fits so many seasons of the year.
Ingredients:
8 tbsp gluten free oats
4 tbsp organic apple sauce
4 tbsp seeds & super food berries
1 lemon ginger shot* (I used Gimber drink)
3 tbsp melted coconut oil
Instructions:
Mix it all in a bown
Place your shaped cookies in a baking tray.
Bake it for 25 minutes
Notes:
* Lemon ginger shot can be made upfront very easily. You will need two lemons and a thick thumb size ginger. Blend it all until it becomes a nice concentrated shot. You can use more ginger if you like it much spicer.
** you can use half of the amount of oats in flour type and add couple of spoons of water to give a better consistency dough.
