Braised Lentils

Ingredients for 5 meals


1 1/4 tbsp Olive oil

2/3 cup White onion (chopped)

5 clove(s) Garlic (minced)

2/3 cup chopped Carrots

2/3 cup diced Celery

1 1/4 cup Lentils, raw

1/3 tsp Salt

2/3 tsp Paprika (dried)

1 1/4 tsp, ground Thyme, dried

1 1/4 cup Vegetable stock/broth, low sodium

1 1/4 leaf Bay leaf



Instructions


  1. In a medium-sized pot, heat oil over medium heat.

  2. Saute onion, garlic, carrot, celery until softened.

  3. Stir in lentils, salt, paprika, and thyme.

  4. Add vegetable stock and bay leaf. Bring to a boil and reduce to a simmer.

  5. Simmer for 15 minutes. Remove bay leaf before serving.

Serve 3/4 cup braised lentils with your choice of rice, barley, or whole-wheat couscous and/or a side of vegetables.
